Vincent DAUVISSAT has been practising biodynamic farming for years, and yet he never mentions it. This is because for him it is by no means a way to further his sales, but instead a personal philosophy that he holds close to his heart.

Far from being interested by the media, Dauvissat is a genuine character who allows the wines to speak for him. And what a speech! One with purity, the most precise minerality, and a dépouillement that reveals the beauty of these pearls.

His wines, often bottled in their youth, are truly exceptional when consumed after 5 years for the CHABLIS, 7 years for the premiers crus, and 9 to 10 years for the grands crus. And they are very long-lasting! Drinking 25 or 30 year old bottle is a magical experience which is yet another testament to how gifted this man. Vincent DAUVISSAT and Jean-Marie RAVENEAU are the best ambassadors to this appellation.

PETIT CHABLIS, CHABLIS, CHABLIS 1er cru “Séchet”, CHABLIS 1er cru “Vaillons”, CHABLIS 1er cru “la Forest”…
And the two grands crus are “les Preuses” and “les Clos”.
